In a hurry!

I really really really (really to the third?) want to blog about my backpacking trip with my brother this weekend, and our subsequent “fish” (beer-battered tempeh) tacos, but no time, no time!

I’m headed to MFNW 2008–Musicfest Northwest–which begins tonight and ends Saturday Night. I’ve got a wristband, my bike, and some champagne. I’m ready to go!

Here’s what I made for a really quick dinner:

1 whole wheat tortilla
1/4 cup kalamata olive and garlic hummus
1/2 cup baby spinach
3 cremini mushrooms, sliced
1 baked Quorn patty, or 1/2 cup stir-fried Quorn pieces

Mix together, and… BAM! Deliciousness, in yo’ mouth. I had this for lunch and dinner tonight.

Okay, I’m off to see The 1900′s, Norfolk and Western, Longhorne Slim, and the Old 97′s. Will be holed up at Berbati’s tonight.

Can’t wait!
